Things, they are a changin'

Are you there blogland? It's me, Melissa. Not sure if you remember me, but I'm still here! And man, have things changed! Last time we spoke, it was 3 years ago. That was pre-new house and pre-kids! Yeah, you heard that right- we have KIDS now- plural!
I'm not sure when I'm going to find the time to blog but I have high aspirations. So you'll have to bear with me. You see, blogging is a stress reliever of sorts. Gives me a chance to unload so-to-speak. Not to mention, I feel like every person in my field has a blog these days. Not that I'm going to start a nutrition blog, but I might have a post here and there. To keep you on your toes, you know? This blog started out as a chronicle of my married life and I intend it to be that way. And since I'm a dietitian by trade, nutrition posts are bound to sneak in there!
So, let's jump in! I'll give you a 30 second recap of what you missed over the last 3 years:
Hubby and I love Arizona so we decided to stay a little while! He got a new job which allows him to travel, we bought a house in an amazing area- much safer than our last place, I got pregnant- with TWINS, they were born in February of this year, we lost our sweet dog to old age in April, and now here we are!
Aren't they the sweetest? Fast forward 9 months and these little boogers are cruising around the coffee table as we speak! Its amazing how much your heart grows after you have kids. I can't imagine my life without them. They are such joys! Full of laughter and smiles!

Anyway, I'm making this post short and sweet. My goal is to blog once a week. There may be weeks where that doesn't happen and there may be weeks where I blog more than once a week! We're just going to go with the flow! I don't want to be too ambitious, I am a full time mom and a part time dietitian! Leave me a comment to encourage this renewed endeavor and stay tuned till next time!
xoxo,
Melissa :)

Life as a Trophy Wife

As many of you know, since moving to Arizona, finding the right job has been difficult. So, I’ve spent most of my unemployed months lounging by the pool and eating bon bons….
…..Bahahahah ok ok I can’t keep a straight face while saying that!

There have been NO bon bons.

Haha! All joking aside, there has been some lounging by the pool but mostly just boredom. After the house was unpacked and set up for the most part, I ran out of things to do. I mean even pinterest gets old after awhile, especially when you don’t have the money to do any of the projects I pinned. So what has this girl been doing to keep herself busy??

Well, I’ve done some cooking. I’ve never been that great of a cook in the past- mostly from lack of experience. So, I took this downtime to practice! I have mastered quite a few amazing recipes as well a few doozies.
Spiral Pasta Vegetable Salad
Summer Vegetable Crepes
Corn Chowder
Gazpacho
Asparagus Frittata
Mango Black Bean Quinoa
Roasted Vegetable Stacked Enchilada Casserole
All of the above I HIGHLY recommend. They were delicious! Let me know if you want the recipe for any of them.

I’ve also been trying to learn the manual setting on my new DSLR Nikon. I took an introduction to photography class to try and get a grasp on all the different manual settings. It’s overwhelming at first but I’m still learning how everything works together to create the best picture!

There are several blogs I’ve stumbled across that have photography tutorials and they’ve helped as well! Click the link below the picture to go to the blog.

My next plan is to take a creative photography class. Thanks to a groupon, I have that already lined up as soon as I get the hang of the shutter speed, aperture and ISO!!

So that's pretty much been my summer!

That's all about to change though. I am hanging up my trophy wife shoes because...

I GOT A JOB! Yep! I have been waiting to tell you all and now I finally can! My first day is Monday. I will be working as the dietitian for a home tube feeding company and I am SUPER pumped! I love tube feeding so I know I am going to love this job. I'll have to keep you posted =)

Happy National Nutrition Month!

Ok, well so I am a few days late announcing the beginning of National Nutrition Month but better late than never right!? So, Happy National Nutrition Month!! This year's theme is "Get Your Plate in Shape" based on the USDA's My Plate diagram that recently replaced the food guide pyramid (yep, no more pyramid). I've been working pretty hard at work on a National Nutrition Month (NNM) board.
Can that take the place of my weekly craft cause I am WAAAAY behind on posting about those.
Anyway, Kane also celebrated NNM!
Aren't these treats so cute!? Teaches him to get his fruits and veggies in (half his plate, per the USDA)!
I got rave reviews from Kane, these treats were definitely a good buy. Not even a crumb left! haha

Hubby and I are getting ready for my granny's 90th birthday! woohoo! The party is tomorrow and it should definitely be a good time! Lots of Granny's family and friends are in town, approx 65-70 guests! I will definitely keep you posted on that one- rumor has it that Granny is going to dance on the bar!!!

Kane is back at "doggy camp". We were able to watch him on the web cam yesterday! Very exciting! They have a bone shaped pool and he was having a blast in there.
A "snapshot" of Kane in the pool.
If anyone wants to watch the web cam, a word to the wise: it's VERY addicting. I get sucked in pretty easily. haha  Well that's all for now since the sun is shining and its calling my name!!

To Detox or Not to Detox?

So, I am convinced we become addicted to certain foods. Take sugar for example, I will CRAVE sugary foods, desserts, candy etc. especially if I have overindulged several days in a row. The more i eat, the stronger the crave is. Almost the same thing with fatty snacks- if I see someone else eating them I immediately want some and I can't stop thinking about it. What is that!? What is in those foods that makes me feel that way?

Now most of you know I am brutally against all fad diets. They are gimmicks to draw you into spending money on that certain product or that certain book that promises to tell you the secret to weight loss or healthy eating. Baloney. Anything that excludes entire food groups is a BAD idea. But, I ran into the idea of a detox diet the other day and it intrigued me. Not the extreme detox where all you drink is liquids for a week, I am talking about a detox diet that excludes all processed foods, sugar, caffeine and alcohol. To eat each food in its truest form for a few days and see how you feel. Doesn't sound that bad to me.

As a disclaimer- I am not endorsing any detox diet. They are not backed up scientifically. No one really knows what these so called "toxins" are that you are "detoxifying" from your body. In fact, that specifically is what your liver and kidneys are for! They filter your blood and take out the stuff your body doesn't need and you excrete it. But, the idea of removing these foods that have such a hold on me for a while sounds nice. Experts say that if you abstain from a habit for 21 days, you will break it. So, I created my own 21 day "detox" diet.

I used this site called Whole Living as my basis for the diet. They suggest a diet that is a little more extreme than I feel is healthy. In their 21 day diet you are supposed to abstain from processed food or beverages, added sugar, dairy, gluten, caffeine, and alcohol. Week 1 states you eat fruits, vegetables, and plant-based fats, including nuts, seeds, and oils only. In Week 2 you add back in seafood, beans and lentils, and organic soy and then in week 3 you add back in gluten-free grains and eggs. Like I said, extreme. I don't want this diet to be a punishment! Nor do I want it to be lacking in nutrients I need- like say protein? I still want to have muscles by the end of this stent. sheesh. I just want to break my weird obsession hold on fatty, bad for you foods.

SO- my version of a 21 day detox diet goes something like this... No processed foods, no added sugar, no caffeine, no alcohol, no bread. Everything else is a go! The no bread rule is mainly because I have gotten a little crazy at work with the rolls and crackers during the day. There just aren't very many options for a health concious vegetarian in the cafeteria. No bread means, basically no bread. I can still have gluten, I can still have oatmeal, tabouleh salad, quinoa etc. And its only for 21 days! come on!

So?? What do you all think?? Is this ridiculous? I am going to lean a little bit more on my dietitian friends for this question. I made a mango and berry smoothis today for breakfast with almond milk. I think i'm going to add some basic protein powder to it tomorrow. I also had green tea in place of coffee.
For my mid morning snack I had almonds and dried apricots.
For lunch I had pinto beans, salad with balsamic vinagrette and green tea
I have a yogurt for later =)

I'll let you know how this goes... so far so good except for the GI discomfort from so much fiber. yikes!
